I love a good cocktail, and this cucumber cocktail is beyond delicious. Serve this cucumber martini after a long day at the office, at a dinner, or at a cocktail party for a nice, refreshing finish to your day.

Serve this with some appetizers, like seared shrimp, apple crostini, mushroom fries, or crispy cauliflower bites, to make it feel like happy hour at your house!

  • Gin or vodka
  • Cucumber Juice (see below)
  • Simple Syrup - A combination of water and sugar, gently heated until the sugar dissolves, then cooled.
  • Fresh Lemon juice or lime juice. The touch of citrus enhances the cucumber flavor and brightens the whole drink.
  • Fresh mint Adds a refreshing herbal touch to the cocktail. If you're not a fan of mint, you can substitute basil, tarragon, lemon verbena, or thyme.
  • Ice

For the cucumber juice:

  • Cucumber: Peeled, chopped, and seeded for the cleanest cucumber flavor.
  • Water

1 + 2 - Make the cucumber juice: Blend the cucumber with water in a blender until smooth.

3 - Strain the puree through a fine strainer into a glass jar or bowl. Discard the pulp left behind and reserve the juice for the cocktail.

MAKE-AHEAD TIP: Make the cucumber juice in advance, and keep it cool in the refrigerator, for up to 3 days before serving.

4 - Make the cucumber martini: In a martini shaker, combine ice, gin, cucumber water, simple syrup, lemon juice, and fresh mint. Shake vigorously until cold. Strain into a martini glass, garnish with a mint leaf and a slice of cucumber, if desired, and serve.

SERVING TIP: Chill the martini glass for a few minutes in the freezer or add ice to the martini glass while you make the cocktail.

  • 2 oz Gin
  • 2 oz Cucumber Juice see below
  • 1 oz Simple Syrup
  • 1 tablespoon Fresh Lemon Juice
  • 1 sprig Fresh Mint plus one leaf for garnish
  • ½ cup Ice

Cucumber Juice

  • 1 cup Cucumber peeled seeded and chopped
  • ½ cup Water

Make the cucumber juice

  • Blend the cucumber with water in a blender until smooth.

To make the cucumber martini

  • In a martini shaker, combine ice, gin, cucumber water, simple syrup, lemon juice, and fresh mint. Shake vigorously until cold. Strain into a martini glass, and garnish with a mint leaf and a slice of cucumber, if desired.
