Rustic Olive Salsa

Ingredients
  

  • cups Garlic Jalapeno Stuffed Olives from Trader Joes, small dice
  • ½ cup Red Bell Pepper finely diced
  • ½ cup Fresh Parsley chopped
  • 1 teaspoon Fresh Oregano or ½ teaspoon dried
  • 1 tsp Lemon Zest
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Red Wine Vinegar
  • 2 tbsp Olive Oil extra virgin
  • ¼ teaspoon Black Pepper or to taste

Instructions
 

  • Chop olives and red pepper into small dice. Roughly chop the parsley, and finely mince the oregano.
  • Add all the ingredients to a bowl and mix them up! Taste and adjust the seasoning as desired.
    That's it! Serve and enjoy.

Make approximately 2 cups of olive salsa.
