A light and refreshing salad packed full of fresh herbs for a delicate spring and summer salad. Quick and easy to whip up on weeknights or when entertaining friends.
Combine all the dressing ingredients in a personal blender and blend until smooth. Set aside. (see note 1)
Little Gem Salad
Break down, wash and dry the little gem lettuce. In a medium mixing bowl, add lettuce and sherry vinaigrette and gently toss until well combined.
Add the dressed lettuce to a serving bowl or plate, and top the lettuce with the sliced vegetables (note 2), herbs, and sunflower seeds. Finish with a sprinkle of flaked sea salt and cracked black pepper if desired.
Notes
Note 1 - If you don't have a personal blender, you can make the sherry vinaigrette in a mason jar. Combine all ingredients and cover, then shake until well combined. The dressing won't emulsify like with the blender but it will still taste delicious.Note 2- Slice the vegetables thin for a lighter texture or use a mandoline.
