Fig Crostini with Goat Cheese and Truffle Honey

Ingredients
  

  • 10 Fresh Figs
  • 1 Baguette
  • 1 Cup Goat Cheese
  • 2 tablespoon Truffle Honey *see note if you can't find truffle honey
  • 3 tablespoon Olive Oil
  • 1 tablespoon Fresh Thyme *optional
  • 1 teaspoon Salt

Instructions
 

To make the toasts:

  • Preheat oven to 425°F.
  • Slice the baguette at a 45° angle into slices about ¼ inch thick
    Line a baking sheet with the sliced baguette in an even layer.
    Drizzle the sliced baguette with olive oil and sprinkle with a little finishing salt.
  • Bake the toasts in the oven on the center rack for 5 minutes
  • After 5 minutes remove the toasts from the oven and immediately flip each toast over.
  • Then bake toasts another 5 minutes
    Remove from oven and let rest another 5 minutes before topping.

Topping the Crostini

  • Evenly spread one tablespoon of goat cheese on each toast
  • Wash and slice figs into ⅛" slices as shown in the photo
  • Top the goat cheese with 3 - 4 slices of fig (depending on the size of your toast)
  • Lay the crostini on a platter, drizzle with the truffle honey and sprinkle with fresh thyme and serve!
